Warm Spiced Rice & Kidney Beans

East African and Caribbean leaning, and completely oil-free. The trick is toasting the spices in a dry pan and mashing a few beans so their starch turns the stock into a glossy gravy.

Warm Spiced Rice & Kidney Beans

why it works

No butter, no coconut milk, so the saturated fat is genuinely zero. Fenugreek is a clinical curiosity worth knowing about — it contains soluble fibres shown to reduce both LDL and triglyceride absorption in the gut.

Ingredients

  • 1 tin kidney beans, thoroughly rinsed and drained
  • pre-cooked or microwave rice, white or brown, enough for the table
  • 150ml low-sodium vegetable stock
  • 1 clove garlic, minced
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp ground fenugreek

Method

  1. Pan on medium heat. Cumin, paprika, fenugreek and minced garlic straight into the dry pan, no oil at all. Stir constantly for 30 seconds to wake the oils up.

  2. Pour in the stock and tip in the rinsed kidney beans. Bring to a gentle simmer.

  3. Simmer for 3–4 minutes, then take a wooden spoon and gently mash just a few of the kidney beans against the side of the pan. Their starch thickens the stock into a rich, glossy gravy — mash too many and you've made refried beans.

  4. Heat to low, tip the rice straight in, and stir continuously for 2–3 minutes until it's absorbed the liquid and turned a rich reddish-brown.

  • Piri piri instead: skip the paprika, use piri piri with the cumin. Nando's spicy rice, but clean
  • Ras el hanout: about a teaspoon instead of the paprika and cumin, for North African jewelled rice
  • Pre-cooked pouch rice genuinely works better here than freshly boiled — it absorbs the stock without going mushy
  • Black beans or a mix work fine in place of the kidney beans
